Zucchini contains low calories and has a high water content which may help you feel full. It also has high in fiber which promotes satiety removing the need for regular snacking and overeating. Adding avocado to this recipe improves better digestion and loads of healthy fats for Phase 1 of the HCG diet.
3 zucchini trimmed
1 medium size ripe avocado
2 tablespoons of grated Parmesan cheese
5 tablespoon pesto
1 pinch of salt and pepper to taste
100 grams of chicken breast
Olive oil
½ teaspoon paprika
Cooking Method:
Using a spiralizer, make zucchini noodles.
In a bowl, mash the avocado and mix the pesto until the mixture is smooth.
Compress the chicken breast then season with salt, pepper, and paprika.
Heat olive oil in a large cooking pan and cook the chicken until it turns golden brown.
Cool for about five minutes and dice the chicken into small pieces.
Heat about a tablespoon of olive oil over medium heat.
Add the noodles, and cook for about 7 minutes while stirring occasionally
Add in the chicken and avocado pesto mixture then cook for five minutes.
Sprinkle the Parmesan then serve.
