Ingredients:
For Salad:
7 ounces of shrimp
¼ teaspoon cumin
½ teaspoon lime zest
½ teaspoon oregano
¼ teaspoon minced garlic
1/ 2 cup minced onion
1 cup chopped mix orange and red bell peppers
¼ teaspoon salt
4 tablespoon fresh lime juice
2 cups riced cauliflower
For dressing:
1 tablespoon cilantro
1/8 teaspoon pepper
¼ cup fresh lime juice
1 tablespoon white vinegar
¼ teaspoon cumin
1 teaspoon Dijon mustard
Directions:
- Whisk all the ingredients for dressing in a small bowl then set aside.
- For shrimp marinate, mix lime zest, cumin, garlic, salt, lime juice, and oregano in a small bowl. Add shrimp, toast and leave for at least 5 minutes.
- Place the marinated shrimp on a skewer and grill for at least 3 minutes on each side.
- In a separate bowl, combine cauliflower rice, bell peppers, and onion. Toast with dressing.
- Place cauliflower mix in a separate small bowl then top each with grilled shrimps.
