Potato Parmesan & Ham Casserole
What You Need:
- 4 medium potatoes
- 1 cup cooked ham, cubes
- 4 tbsp. breadcrumbs
- 1 cup mozzarella, grated
- ½ cup Parmesan cheese
- 1/ 2 cup milk
- 1 tbsp. softened butter
- 2 sprigs of fresh thyme, chopped
- Pepper to taste
Topping:
- 1 ½ tbsp. softened butter
- 4 tbsp. grated Parmesan cheese
Directions:
- Preheat oven to 400F.
- Grease the baking pan with butter. Then sprinkle with breadcrumbs.
- Thinly sliced the potatoes. Let the sliced potatoes sit in cold water for 30 minutes, then towel dry.
- Mix Parmesan cheese, milk, and chopped thyme in a small mixing bowl, then set aside.
- Place a layer of 1/3 of the sliced potatoes in the baking dish. Sprinkle with salt and pepper and drizzle with the Parmesan cheese mixture.
- Add 1/3 of the shredded cheese and ½ of the ham on top of the layered potatoes.
- Continue with the layers, adding the remaining sliced potatoes, Parmesan cheese mixture, and shredded cheese and ham alternately.
- Bake for 30-45 minutes.
- After baking, broil it for 3 minutes to brown the top.
- Enjoy!
Variations
- Instead of ham, use leftover chicken meat.
- Add chopped green onions to garnish.
- Use fresh rosemary instead of thyme.
- Add veggies like chopped bell peppers or broccoli.
