· 1 pound cod, halibut or fish of your choice
· 4 tbsp. parsley, finely chopped
· 15 pieces cherry tomatoes cut in half
· 1 clove garlic, chopped
· 2 tbsp. olive oil
· Salt to taste
1. Sautee garlic in olive oil in a pan on medium heat.
2. Add the sliced tomatoes and parsley and sauté for 3 to 5 minutes.
3. Add the fish and turn to coat in the tomato sauce.
4. Top with 1-2 tbsp. of parsley.
5. Cook on low to medium heat for 3 to 5 minutes. Then flip the fish over, and cook for another 3 to 5 minutes, or until the fish is cooked.
6. Serve and enjoy!
