· 2 large apples
· 2 cups sliced cucumber
· ½ cup fresh chopped mint
· 1/ 2 cup plain Greek yogurt
· 1 teaspoon honey or Stevia to sweetened
· 2 tablespoon apple cider vinegar
· ½ teaspoon garlic powder
· 2 tablespoon lemon juice
· Salt and pepper to taste
1. Start by making the dressing first. In a food processor, simply add Greek yogurt, lemon juice, apple cider vinegar, garlic powder, Stevia or honey, mint, salt and pepper to taste.
2. Blend everything until dressing is creamy.
3. To get things moving along, you might need to scrape down the sides a few times.
4. Prepare the apples and cucumber. Cut everything in chunks or sliced them up.
5. Top the apple and cucumber chunks with the mint yogurt dressing.
6. Mix them up and enjoy with your favorite proteins like steak, chicken or baked salmon.
